Tim asked me recently why I liked to bake 'lemony' things. I don't know, actually. Maybe it's the comradeship of sour and sweet. Don't you think that these lemon curd cakes, (baked yesterday, gone today), have poise and confidence, as well as a gentle grace? Hmmm, maybe I like them because I want to be just like them! Living my dreams through cakes...

ReplyDeleteOf course! I just do a basic butter cake recipe for the cupcakes, then cut out and reserve a disc from the top. Add a dollop of whipped cream and dust the cakes and discs with some icing sugar. Then for the yummy part... a drizzle (or blob, depending on how you make it) of lemon curd and on goes the top. My lemon curd recipe is: combine 3 egg yolks, 1/4 cup caster sugar, 2 tbls lemon juice, a tsp of lemon rind and 20g of butter in a small heatproof bowl over saucepan of simmering water. Stir constantly until it thickens, then refrigerate till cold. You can use lemon butter from a market or the grocery shop too if you want! Enjoy.
ReplyDeleteThere's a Bengali word for this lemon obsession...I know it well since I am such a fan myself...it's TENGA. I can't think of a better way of putting this. Anything with that zingy satisfaction...mmmmm!
